The stable, powerful stance of the Boxer engine’s horizontal layout provides an ideal and robust foundation. Its proven reliability translates directly into the consistent performance essential for a lever espresso machine’s extraction.
In resurrecting this “heart” that has powered countless adventures, we preserve not merely a steel shell, but an attitude toward life-one of daring exploration and an appreciation for substance. Such a precious engine must not be lost to haphazard assembly or crude workmanship. At Aging Lab, we immerse ourselves in the original design ethos, faithfully adhering to the historic holistic design language and craftsmanship. We engineer entirely new components, sparing no expense on processes like casting and CNC machining, to allow this classic machine to be reborn as a complete and perfected whole.
It is paired with numerous authentic motorcycle components, repurposed to serve specific functions in the coffee brewing process. For instance, the carburetor is transformed into the outlet for steam and hot water, while the gear shift lever becomes the pressure relief switch.
Every single engine is uniquely sourced directly from a BMW German-origin “Waterbird” motorcycle that once roamed the roads. Each engine is then ultrasonically cleaned and refinished with fresh paint, restoring it to a like-new condition.
The lever machine was first invented by Achille Gaggia in 1938. Even after the advent of pump-driven machines, its use remained widespread in southern Italy. Its core advantages are low maintenance costs and its ability to produce a shot with a more intense, deeper, sweeter, and smoother flavor profile.
This is due to its unique operating principle: the entire brewing process is powered by spring pressure. A pre-infusion phase uses low pressure (2-3 bar), while the main extraction occurs as the spring expands, providing a pressure that starts high (9-12 bar) and gradually declines. This continuously decreasing pressure curve, combined with even water distribution, fully releases the coffee’s oils and sweetness while avoiding over-extraction, resulting in a shot with a heavy body and balanced flavor.
The spring lever espresso machine, a living fossil among espresso makers, shares with the BMW “Boxer” engine the characteristic of exuding a unique aesthetic born from purely functional, industrial-era mechanics.
The BF25 lever group head honors the classic while revolutionizing it. In traditional lever espresso machines, the iconic, violent kickback of the handle was a moment every user had to guard against-posing both hassle and risk during warming and cleaning.
